Running a cab in stereo? -

Ok, I feel like a total noob asking this, but today I went to Guitar Center to try out some cabs and the employee there kept insisting that I played the cabs in stereo, using one head.
Is this safe to do? I always thought that stereo inputs were for running 2 heads through one cab? He hooked up an MG 2x12 just to show me the difference, first in mono, second in stereo and I was actually surprised how much better it sounded in stereo. It didn't sound as ****ty as I thought it would  I kinda want to try it now with my 1960, but I really don't know if it's safe to do it or not because you can never trust a Guitar Center emplyee's word  Thoughts?
